Protein-Rich Chicken Fajitas

Here's a quick and easy way to make a protein-rich recipe. Yum!

Ingredients:

2 Capsicums (any colour works well)
1 red onion
1-2 Chicken breasts
Olive Oil
Taco Seasoning

Method:

Slice up the capsicums, onion and chicken. Mix everything together in a large bowl, and add taco seasoning to taste and olive oil. Mix well.

This mix will store in the fridge for a 1-2 days. Otherwise put the whole lot into a freezer bag (or make portions) and when you want to eat this, defrost and cook on a sheet pan for about 20 minutes in a hot oven.

Serve on a bed of rice, and garnish with vegetables, guacamole and lots of coriander. Delish!!
