Oat Biscuits Gluten and Dairy Free

Had to make these today for ANZAC Day April 25th.

Makes 12
Prep time: 15 minutes
Baking time: 10-15 minutes

Ingredients:

1 cup (175g) gluten-free flour
1 cup (100g) rolled oats
1 cup (100g) desiccated coconut
1 scoop (30g) Vanilla Protein Powder
150g vegan butter
1/4 cup (85g) rice-malt syrup
2/3 cup (100g) coconut sugar
2 Tbsp hot water
1 tsp baking powder

Method

1. Preheat oven to 180 degrees Celsius and line a large baking tray with baking paper.
2. In a bowl combine the flour, oats, coconut, and protein powder.
3. Place the butter, rice-malt syrup and sugar into a small pan and stir on low heat until it becomes a smooth and silky consistency, about 5 minutes.
4. Stir the baking powder and hot water together then pour this the butter and sugar mixture.
5. Allow this to cool for a few minutes then pour onto the dry ingredients, stir thoroughly until everything is combined.
6. Roll the mixture into balls and place onto the baking tray allowing room to spread, flatten the balls and then place into the oven to bake for 10-15 minutes or until golden brown.

Enjoy with a hot cup of tea. I like peppermint.
