Lunchtime Power Bowl

If you're stuck for lunch ideas, try this power bowl. Full of protein, good carbs, which makes for a satisfying quick meal.

  1. Start with a bowl of cooked brown rice (1/2 to 1 cup or so) - you can use the instant microwave rice, or cook your own

  2. Top with a variety of vegetables and/or salad ingredients (whatever you have in the fridge). I had purple cabbage, radishes, broccoli and fresh cucumbers.

  3. Add your protein - I love marinated tofu, lightly fried,  but today I added a small can of tuna

  4. Add fresh herbs - my favourites are mint and coriander, and loads of spring onion

  5. Add pickled ginger for a flavour boost

  6. Add seeds and  dressing to bring it all together - I love Kewpie toasted sesame dressing
