Miso Marinade

I have made this recipe a few times this this month. It's so delicious that I want to share it with you. Sadly, my photo doesn't do it justice. It really is delicious.

INGREDIENTS:

1/4 cup white miso paste
1/4 cup honey
2 tbsp mirin seasoning
2 tbsp soy sauce

Salmon, skin on
Wasabi-flavoured Japanese-style mayonnaise (optional)
Sesame seeds, to serve


METHOD:
Combine miso paste, honey, mirin and soy sauce in a jug. Reserve 1/3 of the mixture. Smother the fish with the paste, leave to marinate (if you have time) or cook immediately on a BBQ, in the oven, or on a fry pan.

Once cooked, use the remaining paste to smear over the fish and pop under the grill for a few minutes. It will go nice and brown and caramelised. Serve with rice and asian greens. Sprinkle with sesame seeds and mayonnaise to serve.

TOP TIP:  If you don't eat fish, you can use this recipe for mushrooms (my favourite) or for endamame beans, or chicken/beef. It's so versatile, make double and keep in the fridge.
