The best fluffiest pancakes

I was dubious when I read this recipe title from Healthy Living James.

But I did try it, and these pancakes really are the bomb. They are fluffy, they taste amazing, and they are quick to prepare and cook. And can be made in one mixing bowl by hand.

Sadly my food photography doesn't do them justice…

Ingredients:
200 g SR flour (I used gluten free)
1 tsp baking powder
2 tsp chia seeds
1 tbsp melted coconut oil
3 tbsp maple syrup
250ml plant milk (I used almond)

Method:
Add to a bowl all the ingredients in the order as above. Mix with a whisk. Mine was quite thick so I added more milk, and some water as well. Pan fry with a little coconut oil, about 1-2 minutes on each side until golden.

I served these with fresh berries, coconut yoghurt and a drizzle of maple syrup.
