Healthy Choc Protein Bars

Vegan sugar free Choc Protein Bars. Absolutely delicious. Chewy, crunchy, chocolatey goodness. Makes for a perfect afternoon snack. Or a school snack. Enjoy

Ingredients:

1/2 cup (50g) shredded coconut
1/2 cup (70g) Chocolate Protein Powder
1/4 cup (40g) cacao nibs
1 cup (135g) rolled oats
Pinch of sea salt
1/3 cup (110g) brown rice syrup
1/2 cup (120g) almond butter

Method:

Put all dry ingredients into a bowl or food processor and mix gently.

Heat the brown rice syrup until it's nice and runny. Add hot syrup and almond butter to dry ingredients and mix well. It will be quite tough to mix.

Press the mix into a baking pan and pop in the fridge to set. Melt some dairy-free dark chocolate and spread over the top. Once that's set, cut into bit size squares and store in the fridge in a sealed container.

Try not to eat them all at once!
